The goal? To create something special and uniquely Kokomo. 'What’s special about it? It’s all ours and it’s in large part to the people of Kokomo and to the people that choose to support us and live in this beautiful city.'

While Brick St. Deli and Notion Co. is open and thriving, there’s still a touch of mystery to unravel. The Notion Co. side of the business is still in development, with Gibson hinting that 'it’s only going to get better when we finish Notion Co.’s Kitchen.'

In Gibson’s words: 'People can expect unique and familiar sandwiches handcrafted with care and quality ingredients. An inviting open floor plan and all the good vibes you can muster.' With the deli's focus on quality and community, it's clear they're putting their all into making a mark on Kokomo.
